A creamy and refreshing pasta salad with zesty lime dressing, perfect for summertime gatherings.
Ingredients

- Pasta of your choice (rotini, penne, or fusilli)
- 1 can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup corn (canned or frozen)
- 1 avocado
- 1/2 cup Greek yogurt
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the pasta according to package instructions; drain and let cool.
- Combine the chickpeas, diced cucumber, corn, and the cooled pasta in a large bowl.
- Blend the avocado, Greek yogurt, chopped cilantro, lime juice, salt, and pepper in a blender until smooth.
- Pour the dressing over the pasta salad and mix well.
- Serve immediately or refrigerate for up to 2 hours before serving.
Notes
For additional spice, add diced jalapeños or red pepper flakes. Swap chickpeas for black beans for a different twist.
