Description

A creamy and refreshing pasta salad with zesty lime dressing, perfect for summertime gatherings.


Ingredients

  • Pasta of your choice (rotini, penne, or fusilli)
  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup corn (canned or frozen)
  • 1 avocado
  • 1/2 cup Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the pasta according to package instructions; drain and let cool.
  2. Combine the chickpeas, diced cucumber, corn, and the cooled pasta in a large bowl.
  3. Blend the avocado, Greek yogurt, chopped cilantro, lime juice, salt, and pepper in a blender until smooth.
  4. Pour the dressing over the pasta salad and mix well.
  5. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

For additional spice, add diced jalapeños or red pepper flakes. Swap chickpeas for black beans for a different twist.
