Ingredients

- 4 boneless, skinless chicken breasts
- 2 tablespoons chipotle chili powder
- 1 teaspoon cumin
- Juice of 2 limes
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 ripe mango, diced
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Mix the chipotle chili powder, cumin, lime juice, salt, pepper, and olive oil until well combined. Marinate the chicken breasts in the mixture for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Grill the marinated chicken for about 6-7 minutes on each side, or until cooked through.
- Combine the diced mango, red bell pepper, red onion, chopped cilantro, and lime juice in another bowl.
- Serve the grilled chicken topped with the mango salsa.
Notes
For a tropical twist, substitute mango with fresh pineapple. Leftovers can be stored in an airtight container in the fridge for up to three days.
