Description

A vibrant dish combining zesty chipotle marinated chicken with refreshing mango salsa, perfect for summer BBQs.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons chipotle chili powder
  • 1 teaspoon cumin
  • Juice of 2 limes
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 ripe mango, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Mix the chipotle chili powder, cumin, lime juice, salt, pepper, and olive oil until well combined. Marinate the chicken breasts in the mixture for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Grill the marinated chicken for about 6-7 minutes on each side, or until cooked through.
  4. Combine the diced mango, red bell pepper, red onion, chopped cilantro, and lime juice in another bowl.
  5. Serve the grilled chicken topped with the mango salsa.

Notes

For a tropical twist, substitute mango with fresh pineapple. Leftovers can be stored in an airtight container in the fridge for up to three days.
