- 2 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 1 can coconut milk
- 2 tablespoons tikka masala paste
- 1 can diced tomatoes
- Spinach (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Sauté the diced onion over medium heat until translucent. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in the tikka masala paste and let it cook for another minute to release its vibrant flavors.
- Add the drained chickpeas, diced tomatoes, and creamy coconut milk. Stir well and bring to a gentle simmer.
- Let it cook for about 10-15 minutes, stirring occasionally, until the sauce thickens.
- If using, gently stir in a handful of fresh spinach until it wilts.
- Season with sea salt and freshly cracked pepper to taste.
