Description

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 can coconut milk
  • 2 tablespoons tikka masala paste
  • 1 can diced tomatoes
  • Spinach (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Sauté the diced onion over medium heat until translucent. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  2. Stir in the tikka masala paste and let it cook for another minute to release its vibrant flavors.
  3. Add the drained chickpeas, diced tomatoes, and creamy coconut milk. Stir well and bring to a gentle simmer.
  4. Let it cook for about 10-15 minutes, stirring occasionally, until the sauce thickens.
  5. If using, gently stir in a handful of fresh spinach until it wilts.
  6. Season with sea salt and freshly cracked pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
