- 4 pieces of flatbread
- 1/2 cup cream cheese (softened)
- 1 cup cooked shredded chicken
- 1 1/2 cups spinach (roughly chopped)
- 1/3 cup artichokes (drained and chopped)
- 1/4 cup diced red onion
- 1/4 cup sliced sun-dried tomatoes packed in oil (drained)
- 1 cup shredded part-skim mozzarella cheese
- 1/4 cup shredded Parmesan cheese
Instructions
- Preheat the oven to 450°F (180°C).
- Place the flatbread onto a metal baking sheet and spread the cream cheese across each piece.
- Top each flatbread with cooked shredded chicken.
- Sprinkle chopped spinach over the chicken, followed by artichokes, diced red onion, and sun-dried tomatoes.
- Generously layer on mozzarella and finish with Parmesan cheese.
- Bake for 8-10 minutes until the cheese is melted and edges are crispy.
Notes
For a zesty twist, you may swap cream cheese for barbecue sauce and use shredded chicken tossed in barbecue sauce. Leftover turkey works great too!
