Description

A delightful blend of creamy cheese, tender chicken, and vibrant spinach on a crispy flatbread, perfect for cozy nights.


Ingredients

  • 4 pieces of flatbread
  • 1/2 cup cream cheese (softened)
  • 1 cup cooked shredded chicken
  • 1 1/2 cups spinach (roughly chopped)
  • 1/3 cup artichokes (drained and chopped)
  • 1/4 cup diced red onion
  • 1/4 cup sliced sun-dried tomatoes packed in oil (drained)
  • 1 cup shredded part-skim mozzarella cheese
  • 1/4 cup shredded Parmesan cheese

Instructions

  1. Preheat the oven to 450°F (180°C).
  2. Place the flatbread onto a metal baking sheet and spread the cream cheese across each piece.
  3. Top each flatbread with cooked shredded chicken.
  4. Sprinkle chopped spinach over the chicken, followed by artichokes, diced red onion, and sun-dried tomatoes.
  5. Generously layer on mozzarella and finish with Parmesan cheese.
  6. Bake for 8-10 minutes until the cheese is melted and edges are crispy.

Notes

For a zesty twist, you may swap cream cheese for barbecue sauce and use shredded chicken tossed in barbecue sauce. Leftover turkey works great too!
