Description

A warm, toasted chicken pesto sandwich filled with tender chicken, gooey mozzarella, and vibrant pesto for a delightful meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup pesto sauce
  • 4 slices fresh mozzarella cheese
  • 4 ciabatta rolls or sandwich buns
  • Fresh basil leaves (optional)

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat until shimmering and ready.
  3. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until they are fully cooked through and beautifully golden.
  4. Spread a generous layer of pesto sauce on one side of each ciabatta roll.
  5. Place the cooked chicken on the pesto-spread side of the rolls and top with slices of fresh mozzarella cheese.
  6. Close the sandwich, and if desired, grill it in a pan for a few minutes until the cheese is melted and the bread is golden and crisp.

Notes
