- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup pesto sauce
- 4 slices fresh mozzarella cheese
- 4 ciabatta rolls or sandwich buns
- Fresh basil leaves (optional)
Instructions
- Season the chicken breasts generously with salt and pepper on both sides.
- Heat olive oil in a skillet over medium heat until shimmering and ready.
- Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until they are fully cooked through and beautifully golden.
- Spread a generous layer of pesto sauce on one side of each ciabatta roll.
- Place the cooked chicken on the pesto-spread side of the rolls and top with slices of fresh mozzarella cheese.
- Close the sandwich, and if desired, grill it in a pan for a few minutes until the cheese is melted and the bread is golden and crisp.

Notes
