- 1 onion, chopped
- 2 cups apple cider
- 1 cup heavy cream
- 2 apples, cored and sliced

Instructions
- Heat the olive oil in a large skillet over medium heat. Carefully place your chicken thighs in the skillet and brown them on both sides.
- Remove the chicken thighs and set them aside. In the same skillet, add the chopped onion and sauté until translucent.
- Pour in the apple cider and bring it to a gentle simmer. Return the chicken to the skillet and cover it. Let braise for about 30 minutes.
- Stir in the heavy cream, allowing it to meld with the apple cider.
- Caramelize the apple slices in a separate pan over medium heat until golden brown.
- Serve the chicken hot, topped with the creamy sauce and caramelized apples, finishing with fresh thyme.
