- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tablespoon lemon juice (optional)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then place them in the skillet. Cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.
- Add the fresh spinach to the same skillet and sauté until wilted.
- Stir in the heavy cream and chicken broth, bringing to a gentle simmer.
- Gradually add the Parmesan cheese, stirring until it melts and thickens.
- If using, add lemon juice. Return the chicken to the skillet and coat with the sauce.
- Serve hot, garnished with fresh parsley.
