Description

A comforting dish of tender chicken breasts simmered in a creamy sauce with vibrant spinach, perfect for busy weeknights or family gatherings.


Ingredients

  • 4 chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon juice (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then place them in the skillet. Cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.
  3. Add the fresh spinach to the same skillet and sauté until wilted.
  4. Stir in the heavy cream and chicken broth, bringing to a gentle simmer.
  5. Gradually add the Parmesan cheese, stirring until it melts and thickens.
  6. If using, add lemon juice. Return the chicken to the skillet and coat with the sauce.
  7. Serve hot, garnished with fresh parsley.

Notes
