Description

Delightfully chewy peanut butter cookies made with almond flour, perfect for cozy days.


Ingredients

  • 1 cup peanut butter
  • 1 cup almond flour
  • 1 cup sugar (or sweetener of choice)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the peanut butter, almond flour, sugar, egg, vanilla extract, baking soda, and salt in a mixing bowl.
  3. Mix until a dough forms and each ingredient is well combined.
  4. Scoop tablespoon-sized portions of dough and roll them into balls.
  5. Place them on a baking sheet lined with parchment paper and use a fork to flatten each ball.
  6. Bake for 10-12 minutes or until the edges are golden brown.
  7. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
