Description

Warm, golden cheesy rice balls filled with creamy risotto, gooey mozzarella, and surprises of ham and peas, perfect for a cozy meal or appetizer.


Ingredients

Scale
  • 2 cups cooked risotto rice
  • 1 cup mozzarella cheese, cubed
  • 1/2 cup cooked ham, diced
  • 1/2 cup sweet peas
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. Combine the cooked rice, mozzarella cheese, ham, and sweet peas in a large bowl. Season with salt and pepper.
  2. Form small balls around a cube of cheese, each the size of a golf ball.
  3. Set up a dredging station with flour, beaten eggs, and breadcrumbs. Roll each ball in flour, dip in egg, and coat with breadcrumbs.
  4. Heat vegetable oil in a deep fryer or pot to 350°F (175°C).
  5. Fry the rice balls in batches for about 3-4 minutes until golden brown.
  6. Remove and drain on paper towels before serving.

Notes

For added flavor, experiment with different fillings like spinach and feta or chipotle chicken.
