Ingredients

- 2 cups cooked risotto rice
- 1 cup mozzarella cheese, cubed
- 1/2 cup cooked ham, diced
- 1/2 cup sweet peas
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
- Combine the cooked rice, mozzarella cheese, ham, and sweet peas in a large bowl. Season with salt and pepper.
- Form small balls around a cube of cheese, each the size of a golf ball.
- Set up a dredging station with flour, beaten eggs, and breadcrumbs. Roll each ball in flour, dip in egg, and coat with breadcrumbs.
- Heat vegetable oil in a deep fryer or pot to 350°F (175°C).
- Fry the rice balls in batches for about 3-4 minutes until golden brown.
- Remove and drain on paper towels before serving.
Notes
For added flavor, experiment with different fillings like spinach and feta or chipotle chicken.
