- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup butter, melted
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups fresh blueberries
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish to prepare for the delightful layers.
- Combine the flour, oats, brown sugar, and melted butter in a bowl. Stir until it becomes crumbly. Press half of this mixture into the bottom of the prepared baking dish, creating a sturdy crust.
- Beat together the softened cream cheese, granulated sugar, egg, and vanilla extract in a separate bowl until smooth and creamy.
- Spread the cream cheese mixture evenly over the crust in the baking dish.
- Scatter the fresh blueberries on top of the cream cheese layer.
- Crumble the remaining oat mixture over the blueberries.
- Bake for 30-35 minutes or until set and golden on top.
- Allow the bars to cool before cutting into them.
Notes
These bars can be made a day in advance and stored in the refrigerator. For a lighter version, Greek yogurt can substitute for cream cheese.
