Description

Deliciously unique muffins combining creamy cottage cheese and juicy blueberries, perfect for breakfast or a cozy snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup flour
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Combine the cottage cheese, melted butter, eggs, and vanilla extract in a large mixing bowl until blended.
  3. Whisk together the flour, sugar, baking powder, baking soda, and salt in another bowl until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined (don’t overmix!).
  5. Fold in the blueberries, being careful not to crush them.
  6. Divide the batter evenly among the muffin cups, filling each one about three-quarters full.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For variations, try adding lemon zest, banana, walnuts, or chocolate chips.
