- 1 cup cottage cheese
- 1 cup flour
- 1/2 cup sugar
- 1/4 cup melted butter
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup fresh or frozen blueberries
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- Combine the cottage cheese, melted butter, eggs, and vanilla extract in a large mixing bowl until blended.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in another bowl until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined (don’t overmix!).
- Fold in the blueberries, being careful not to crush them.
- Divide the batter evenly among the muffin cups, filling each one about three-quarters full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For variations, try adding lemon zest, banana, walnuts, or chocolate chips.
