Description

A delicious and easy pasta salad that combines the classic flavors of bacon, lettuce, and tomato on a warm summer day.


Ingredients

  • 8 oz farfalle pasta
  • 6 slices cooked turkey bacon, chopped
  • 2 cups cherry tomatoes, halved
  • 2 cups lettuce, chopped
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the farfalle pasta according to the package instructions. Once cooked, drain and let cool completely.
  2. Combine the cooled pasta, chopped turkey bacon, halved cherry tomatoes, and chopped lettuce in a large mixing bowl.
  3. Prepare the dressing by whisking together mayonnaise or Greek yogurt with lemon juice, salt, and pepper until smooth.
  4. Dress the salad by pouring the creamy dressing over and gently tossing everything until evenly coated.
  5. Serve chilled after refrigerating for at least 30 minutes to enhance flavors.

Notes

This pasta salad can be made a day in advance for best flavors. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
