Ingredients

  • 1 pound boneless, skinless chicken thighs (or chicken breasts)
  • Kosher salt
  • Pepper
  • BBQ seasoning blend
  • 3 tablespoons BBQ sauce (plus more to drizzle in quesadillas)
  • 2 tablespoons hot honey (plus more to drizzle in quesadillas)
  • 4 large burrito size flour tortillas
  • 3 cups shredded cheese of choice
  • 1/2 cup chopped cilantro (optional)
  • Optional toppings: sour cream, jalapenos

Instructions

  1. Preheat your griddle to medium. Add your cooking oil, then toss in the chicken along with kosher salt, pepper, and BBQ seasoning. Cook for 6 minutes, mixing a few times with spatulas until the chicken is tender and fragrant.
  2. Drizzle in the BBQ sauce and hot honey, letting the flavors meld together. Cook for an additional 2 minutes, stirring well to coat the chicken in that tangy-sweet goodness.
  3. Remove the chicken from the griddle, scrape it clean, and lower the heat to medium-low.
  4. Add a bit more cooking oil, then lay the tortillas flat on the griddle. Sprinkle half of the shredded cheese on one side of each tortilla.
  5. Load each tortilla with the chicken, adding a drizzle of extra BBQ sauce and hot honey. If you’re feeling a little zesty, toss in the chopped cilantro. Top with the remaining cheese.
  6. Fold the empty side of each tortilla over the filled side, cooking the quesadillas for about a minute or two per side until the cheese has melted and the tortillas are crisped to your liking.
  7. Once done, remove them from the griddle and slice into wedges. Serve with optional toppings like sour cream or jalapenos for that extra kick!

Notes

Make-Ahead Magic: Prepare the chicken mixture in advance and store it in the fridge for a quick meal during busy evenings. Allow quesadillas to sit for a minute after cooking before slicing to let the cheese set.
