Description

An irresistible fusion of tacos and the legendary Big Mac filled with savory beef, melty cheese, and a special sauce.


Ingredients

  • 1 pound ground beef (80/20)
  • 8 small flour tortillas
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 slices American cheese
  • ¾ cup shredded iceberg lettuce
  • ½ cup dill pickle chips
  • ¼ cup finely chopped white onion
  • 1 tablespoon neutral oil (for skillet)
  • ¾ cup mayonnaise (for special sauce)
  • 3 tablespoons ketchup (for special sauce)
  • 2 tablespoons yellow mustard (for special sauce)
  • 2 tablespoons sweet pickle relish (for special sauce)
  • 1 teaspoon white vinegar (for special sauce)
  • ½ teaspoon paprika (for special sauce)
  • ½ teaspoon garlic powder (for special sauce)
  • ½ teaspoon onion powder (for special sauce)

Instructions

  1. Make the special sauce: In a small bowl, whisk together the mayonnaise, ketchup, mustard, pickle relish, vinegar, paprika, garlic powder, and onion powder until creamy and well combined. Refrigerate until ready to use.
  2. Prepare the tacos: Divide the ground beef into 8 equal portions. Press a thin, even layer of beef onto one side of each tortilla, and season them with salt and pepper.
  3. Heat the neutral oil in a large skillet over medium-high heat. Once hot, carefully place the tortillas beef-side down into the skillet. Cook for 3–4 minutes until browned.
  4. Flip the tacos over and add a slice of American cheese to each. Cook for an additional 1–2 minutes until the cheese is melty.
  5. Remove the tacos from the skillet, and layer with shredded lettuce, dill pickle chips, and chopped onions. Drizzle the special sauce over the top.
  6. Fold the tacos in half and serve immediately while hot and crispy.

Notes

For extra crispy tortillas, broil assembled tacos for a few minutes. Make the sauce a day ahead for best flavor.
