- 8 large eggs

Instructions
- Preheat the oven to 375°F (190°C).
- Cook the sausage in a skillet over medium heat until browned, breaking it apart as it cooks.
- Add the diced onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
- Whisk together the eggs and milk in a bowl, seasoning with salt and pepper.
- Layer the cooked sausage mixture and tater tots in a greased baking dish.
- Pour the egg mixture over the tater tots, ensuring they’re coated.
- Sprinkle your choice of cheese on top.
- Bake for 30-35 minutes, until the eggs are set and the top is golden brown.
