Description

Ingredients

  • 1 pound breakfast sausage
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 8 large eggs
  • 2 cups milk
  • 3 cups frozen tater tots
  • 2 cups shredded cheese (cheddar or your choice)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the sausage in a skillet over medium heat until browned, breaking it apart as it cooks.
  3. Add the diced onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
  4. Whisk together the eggs and milk in a bowl, seasoning with salt and pepper.
  5. Layer the cooked sausage mixture and tater tots in a greased baking dish.
  6. Pour the egg mixture over the tater tots, ensuring they’re coated.
  7. Sprinkle your choice of cheese on top.
  8. Bake for 30-35 minutes, until the eggs are set and the top is golden brown.
  9. Allow to cool slightly before serving.
