- 2 medium sweet potatoes, peeled and diced
- 2 cups cooked chicken, shredded or diced
- 1 cup BBQ sauce
- 1 medium red onion, diced
- 1 cup corn (fresh, frozen, or canned)
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon smoked paprika
- 2 green onions, sliced, for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes, seasoning with salt, black pepper, and smoked paprika.
- Sauté gently until the sweet potatoes are tender and golden, about 10-15 minutes.
- Once the sweet potatoes are tender, toss in the diced red onion and corn.
- Allow them to cook until the onion becomes translucent.
- Stir in the cooked chicken, drizzling the BBQ sauce over everything.
- Mix until well combined and let simmer for about 5 minutes.
- Top your skillet with the shredded cheddar cheese, covering it completely.
- Reduce heat to low, cover the skillet, and let it cook until the cheese has melted, about 3-5 minutes.
- Remove it from the heat, sprinkle with sliced green onions, and serve warm.
