Description

Deliciously cozy muffins blending sweet bananas, chocolate, mini marshmallows, and graham cracker crumbs for a delightful twist on a campfire treat.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup chocolate chips
  • 1/2 cup mini marshmallows
  • 1/4 cup graham cracker crumbs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the mashed bananas, sugar, melted butter, egg, and vanilla until smooth.
  3. In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the banana mixture and stir until just combined.
  5. Gently fold in the chocolate chips, mini marshmallows, and graham cracker crumbs.
  6. Divide the batter evenly into the muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool in the muffin tin for a few minutes before transferring to a wire rack.
