Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips
  • 1/2 cup walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Mash the bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Stir in the sugar, beaten egg, and vanilla extract until well combined.
  6. Gradually mix in the flour until just incorporated—be careful not to overmix!
  7. Fold in the chocolate chips and walnuts if using.
  8. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool before serving. Enjoy the sweet aroma and cozy vibes!

Notes

For best results, use overripe bananas. Muffins can be refrigerated overnight before baking for a fresh breakfast.
