Description

Delightful scones blending the sweet taste of bananas with warm spices, perfect for any occasion.


Ingredients

Scale
  • 2 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon sugar (for topping)
  • 1/4 cup brown sugar (for glaze)
  • 1 tablespoon milk (for glaze)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs, with chunks about the size of peas.
  4. Combine the mashed bananas, buttermilk, and vanilla extract in another bowl, mixing until smooth.
  5. Stir the banana mixture into the dry ingredients until just combined, being gentle to avoid overmixing.
  6. Turn the dough out onto a floured surface and gently knead it a few times. Shape the dough into a circle about 1 inch thick.
  7. Cut the circle into wedges and place them on the prepared baking sheet.
  8. Sprinkle cinnamon sugar on top of each scone.
  9. Bake for 15–20 minutes or until golden brown.
  10. Mix the brown sugar and milk in a small bowl for the glaze and drizzle it over the cooled scones before serving.

Notes

Scones can be made the night before and refrigerated. They freeze well for later enjoyment.
