- 2 ripe bananas, mashed
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 tablespoon cinnamon sugar (for topping)
- 1/4 cup brown sugar (for glaze)
- 1 tablespoon milk (for glaze)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs, with chunks about the size of peas.
- Combine the mashed bananas, buttermilk, and vanilla extract in another bowl, mixing until smooth.
- Stir the banana mixture into the dry ingredients until just combined, being gentle to avoid overmixing.
- Turn the dough out onto a floured surface and gently knead it a few times. Shape the dough into a circle about 1 inch thick.
- Cut the circle into wedges and place them on the prepared baking sheet.
- Sprinkle cinnamon sugar on top of each scone.
- Bake for 15–20 minutes or until golden brown.
- Mix the brown sugar and milk in a small bowl for the glaze and drizzle it over the cooled scones before serving.
Notes
Scones can be made the night before and refrigerated. They freeze well for later enjoyment.
