Ingredients

- 1 package of refrigerated pie crusts
- 2 cups of peeled and diced apples
- 1/2 cup of sugar
- 1 teaspoon of cinnamon
- 1 tablespoon of lemon juice
- 1 egg (for egg wash)
- Optional: vanilla ice cream or whipped cream for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine the diced apples, sugar, cinnamon, and lemon juice, mixing them gently until well-blended.
- Roll out the pie crusts on a lightly floured surface and cut them into small circles using a cookie cutter or a glass.
- Place a spoonful of the apple mixture in the center of each circle, ensuring not to overfill them.
- Fold the circles over to make mini pies and seal the edges with a fork.
- Beat the egg and brush it over the top of each pie for that golden-brown finish.
- Place the pies on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown and bubbly.
- Allow to cool slightly before serving. Enjoy them with a scoop of vanilla ice cream or whipped cream if desired.
Notes
These bites can be made ahead of time and stored in the refrigerator. They’re also great for freezing unbaked and baking later.
