Ingredients

- 1 can chickpeas, drained and rinsed
- 2 cups vegetable broth or water

- Juice of 1 lemon
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the rice to the pot and stir for a few minutes until slightly toasted.
- Pour in the vegetable broth or water and bring to a gentle boil.
- Once boiling, add the chickpeas, salt, and pepper, then reduce heat to low.
- Cover and let simmer for 15-20 minutes until rice is tender.
- Remove from heat, mix in fresh herbs and lemon juice.
- Serve warm as a main dish or side.
