- 2 tablespoons vegetable oil
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 1 cup carrots, julienned
- 1 cup snap peas
- 3 cloves garlic, minced
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Optional toppings: green onions, sesame seeds, or cilantro
Instructions
- Cook the noodles following the package instructions. Once ready, drain and set aside.
- Heat the vegetable oil in a large wok or frying pan over medium heat.
- Add the minced garlic and stir-fry for about 30 seconds until fragrant.
- Toss in the sliced bell peppers, broccoli florets, julienned carrots, and snap peas. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
- Add the cooked noodles to the pan. Pour in the soy sauce and sesame oil, and toss everything together.
- Season with salt and pepper to taste.
- Serve hot, garnished with your choice of green onions, sesame seeds, or fresh cilantro.
Notes
For extra protein, consider adding diced chicken, shrimp, or tofu. You can also customize it with lime juice or sriracha for a zesty kick.
