Description

A heartwarming Vegan Bolognese that’s perfect for cozy weeknight dinners, packed with protein from lentils and bursting with flavors from fresh veggies and herbs.


Ingredients

Scale
  • 1 cup lentils
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 can crushed tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Pasta of choice

Instructions

  1. Heat the olive oil in a pot over medium heat until fragrant.
  2. Add the diced onion, carrots, and celery; sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the lentils, crushed tomatoes, oregano, basil, salt, and pepper, stirring to combine.
  5. Cover the pot and simmer for about 20-25 minutes or until the lentils are tender.
  6. Prepare your pasta according to the package instructions.
