Description

Ingredients

  • 1 can butter beans, drained and rinsed
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh basil for garnish

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Stir in the chopped sun-dried tomatoes, cooking until they soften.
  4. Add the butter beans and Italian seasoning, mixing well.
  5. Pour in the heavy cream and bring to a gentle simmer.
  6. Stir in the Parmesan cheese and let it melt to thicken the sauce.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh basil before serving.
