Description

A cozy and delicious breakfast bowl packed with ground chicken, eggs, and vibrant veggies for a nutritious start to your day.

Ingredients

Scale
  • 1 pound ground chicken
  • 3 large eggs
  • 2 medium potatoes, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a drizzle of olive oil in a skillet over medium heat. Add the diced potatoes and cook until golden and tender, about 10-12 minutes.
  2. Add the diced bell pepper and onion to the skillet and sauté until softened, about 5 minutes.
  3. Cook the ground chicken in a separate pan with chili powder, cumin, salt, and pepper until fully cooked.
  4. Whisk the eggs in a bowl and cook them in a non-stick skillet until fluffy and just set.
  5. Assemble your breakfast bowls by layering the savory chicken, fluffy eggs, and potato mixture. Serve warm.

Notes

You can customize the bowls with toppings like avocado or cheese, and feel free to use different proteins if desired.
