- 2 lbs ground beef (80/20 preferred for juiciness)
- 1 cup shredded Swiss cheese
- 1 cup cooked turkey bacon, chopped
- 1 cup mushrooms, sliced and sautéed
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup breadcrumbs
- 2 tbsp Worcestershire sauce
- Salt and pepper, to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with foil or use a loaf pan for easier cleanup.
- Cook the turkey bacon in a skillet over medium heat until crispy. Remove and set aside, keeping a bit of the drippings in the pan.
- In the same skillet, sauté the sliced mushrooms in the turkey bacon fat until nicely browned. Let cool slightly.
- In a large mixing bowl, combine the ground beef, eggs, breadcrumbs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper. Stir gently until just combined.
- Fold in half of the shredded Swiss cheese, along with the sautéed mushrooms.
- Shape the mixture into a loaf on the prepared baking sheet. Press the remaining Swiss cheese, crispy turkey bacon, and mushrooms on top of the meatloaf for extra flavor.
- Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
- Once done, let the meatloaf rest for about 10 minutes before slicing. Garnish with fresh parsley and serve warm.
Notes
Make-ahead advice: You can prepare the meatloaf mixture a day before and refrigerate it. Just shape it and bake when ready. Store leftovers in an airtight container for up to 3-4 days.
