Description

This Swiss Bacon Mushroom Meatloaf combines nostalgic warmth with a modern twist, featuring tender beef, rich Swiss cheese, and savory turkey bacon. Perfect for chilly nights and family gatherings.


Ingredients

  • 2 lbs ground beef (80/20 preferred for juiciness)
  • 1 cup shredded Swiss cheese
  • 1 cup cooked turkey bacon, chopped
  • 1 cup mushrooms, sliced and sautéed
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 2 tbsp Worcestershire sauce
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with foil or use a loaf pan for easier cleanup.
  2. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and set aside, keeping a bit of the drippings in the pan.
  3. In the same skillet, sauté the sliced mushrooms in the turkey bacon fat until nicely browned. Let cool slightly.
  4. In a large mixing bowl, combine the ground beef, eggs, breadcrumbs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper. Stir gently until just combined.
  5. Fold in half of the shredded Swiss cheese, along with the sautéed mushrooms.
  6. Shape the mixture into a loaf on the prepared baking sheet. Press the remaining Swiss cheese, crispy turkey bacon, and mushrooms on top of the meatloaf for extra flavor.
  7. Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Once done, let the meatloaf rest for about 10 minutes before slicing. Garnish with fresh parsley and serve warm.

Notes

Make-ahead advice: You can prepare the meatloaf mixture a day before and refrigerate it. Just shape it and bake when ready. Store leftovers in an airtight container for up to 3-4 days.
