Description

A refreshing and colorful salad perfect for summer picnics and gatherings, combining fresh corn, avocado, and zesty lime.


Ingredients

  • 2 cups fresh corn kernels
  • 1 ripe avocado, diced
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the fresh corn kernels, diced avocado, bell pepper, red onion, cherry tomatoes, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to mix everything together.
  4. Chill in the refrigerator for about 30 minutes before serving to allow the flavors to meld beautifully.
