Description

A refreshing salad combining grilled corn, crunchy cucumbers, and a creamy dressing, perfect for summer gatherings.


Ingredients

  • 2 ears of corn
  • 1 large cucumber
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat. Grill the corn for about 10-12 minutes, rotating occasionally, until it’s beautifully charred and fragrant.
  2. Once grilled to perfection, allow the corn to cool slightly. Using a sharp knife, carefully remove the kernels from the cob and place them in a mixing bowl.
  3. Dice the large cucumber and add it to the bowl along with the chopped red onion and fresh cilantro. Toss gently to combine.
  4. In a separate bowl, whisk together the Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, and a sprinkle of salt and pepper until smooth and creamy.
  5. Pour the dressing over the corn mixture, tossing everything together until evenly coated.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld beautifully.
