Ingredients

- 2 ears of corn
- 1 large cucumber
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt
- 1 tablespoon mayonnaise
- 1 clove garlic, minced
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat. Grill the corn for about 10-12 minutes, rotating occasionally, until it’s beautifully charred and fragrant.
- Once grilled to perfection, allow the corn to cool slightly. Using a sharp knife, carefully remove the kernels from the cob and place them in a mixing bowl.
- Dice the large cucumber and add it to the bowl along with the chopped red onion and fresh cilantro. Toss gently to combine.
- In a separate bowl, whisk together the Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, and a sprinkle of salt and pepper until smooth and creamy.
- Pour the dressing over the corn mixture, tossing everything together until evenly coated.
- Cover and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld beautifully.
