Description

Delightful homemade cookies inspired by Starbucks’ Ginger Molasses Cookies, featuring warm spices and a perfect chewy texture.


Ingredients

  • 2 ¼ Cups all-purpose flour
  • 1 Cup dark brown sugar
  • ¾ Cup unsalted butter (softened)
  • ¼ Cup molasses (light flavored)
  • 1 large egg
  • 2 Teaspoons baking soda
  • 1 ¼ Teaspoons ground ginger
  • 1 Teaspoon ground cinnamon
  • ¼ Teaspoon salt
  • ¼ Teaspoon ground nutmeg
  • ¼ Cup white sugar (for rolling, more if needed)

Instructions

  1. Preheat your oven to 375°F.
  2. Prepare a couple of large baking sheets by lining them with parchment paper.
  3. Cream together the dark brown sugar and softened butter until light and airy, about 3 to 4 minutes.
  4. Stream in the molasses, mixing until fully incorporated.
  5. Add in the egg and mix until fluffy and combined.
  6. Sift in the flour, salt, baking soda, and spices into the butter mixture.
  7. Combine on low speed until a thick dough forms.
  8. Roll about ¼ cup of the dough into a ball using your hands.
  9. Coat the dough ball in white sugar and place it on the baking sheet.
  10. Dampen your fingers and gently press down on the ball to flatten it.
  11. Bake one sheet of cookies at a time for about 10 to 15 minutes.
  12. Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For added flavor variations, consider mixing in chocolate chips, drizzling lemon glaze, or folding in nuts. Store cookies in an airtight container for up to a week.
