- 2 ¼ Cups all-purpose flour
- 1 Cup dark brown sugar
- ¾ Cup unsalted butter (softened)
- ¼ Cup molasses (light flavored)
- 1 large egg
- 2 Teaspoons baking soda
- 1 ¼ Teaspoons ground ginger
- 1 Teaspoon ground cinnamon
- ¼ Teaspoon salt
- ¼ Teaspoon ground nutmeg
- ¼ Cup white sugar (for rolling, more if needed)
Instructions
- Preheat your oven to 375°F.
- Prepare a couple of large baking sheets by lining them with parchment paper.
- Cream together the dark brown sugar and softened butter until light and airy, about 3 to 4 minutes.
- Stream in the molasses, mixing until fully incorporated.
- Add in the egg and mix until fluffy and combined.
- Sift in the flour, salt, baking soda, and spices into the butter mixture.
- Combine on low speed until a thick dough forms.
- Roll about ¼ cup of the dough into a ball using your hands.
- Coat the dough ball in white sugar and place it on the baking sheet.
- Dampen your fingers and gently press down on the ball to flatten it.
- Bake one sheet of cookies at a time for about 10 to 15 minutes.
- Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For added flavor variations, consider mixing in chocolate chips, drizzling lemon glaze, or folding in nuts. Store cookies in an airtight container for up to a week.
