- 1 lb chicken breast
- 4 cups chicken broth
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 1 cup jalapeños, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until soft and fragrant.
- Add the diced jalapeños and cook for another 2 minutes.
- Stir in the chicken breast and cook until browned on all sides.
- Pour in the chicken broth and bring it to a gentle simmer.
- Remove the chicken once cooked through (about 15 minutes), shred it, and return it to the pot.
- Stir in the cream cheese and shredded cheddar until melted and well combined.
- Season with paprika, salt, and pepper to taste.
- Serve hot in your favorite bowls, topped with additional cheese or fresh herbs if desired.
Notes
Try adding lime juice, crunchy toppings, or avocado for variations. Store leftovers in an airtight container for up to 3 days.
