Instructions
- Cream together the brown sugar, white sugar, peanut butter, and softened butter in a stand mixer until smooth.
- Beat in the egg and vanilla extract until incorporated.
- Combine the all-purpose flour, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture until well mixed.
- Transfer the dough to a bowl, cover, and refrigerate for at least one hour.
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Roll about 1-1/2 tablespoons of dough into a ball and place it on the baking sheet.
- Press down the dough ball with a fork to create a crisscross pattern.
- Bake for 9-11 minutes or until golden brown.
