Description

Deliciously soft and chewy peanut butter cookies that are keto-friendly, offering nostalgia and comfort in every bite.


Ingredients

  • 1 cup natural creamy peanut butter (no added sugar)
  • 1/2 cup granulated erythritol or your favorite keto-friendly sweetener
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the creamy peanut butter and sweetener in a mixing bowl, stirring until well blended.
  3. Crack in the egg and add the vanilla extract, then sprinkle in the baking soda and salt. Mix thoroughly.
  4. Form small balls of dough and place them on the prepared baking sheet, spaced a couple of inches apart.
  5. Flatten each ball with a fork to create a crisscross pattern.
  6. Bake in the preheated oven for 10-12 minutes, or until the edges are golden.
  7. Allow the cookies to cool for a few minutes before transferring to a wire rack to cool completely.
