- 1 cup natural creamy peanut butter (no added sugar)
- 1/2 cup granulated erythritol or your favorite keto-friendly sweetener
- 1 large egg
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the creamy peanut butter and sweetener in a mixing bowl, stirring until well blended.
- Crack in the egg and add the vanilla extract, then sprinkle in the baking soda and salt. Mix thoroughly.
- Form small balls of dough and place them on the prepared baking sheet, spaced a couple of inches apart.
- Flatten each ball with a fork to create a crisscross pattern.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden.
- Allow the cookies to cool for a few minutes before transferring to a wire rack to cool completely.
