Ingredients

- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup molasses
- 1 large egg
- Royal icing for decoration
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt in a bowl.
- Cream together the softened butter and brown sugar until light and fluffy.
- Stir in the molasses and egg until well incorporated.
- Gradually add the flour mixture to the wet ingredients until a soft dough forms.
- Roll out the dough to 1/4 inch thickness and cut out gingerbread men shapes.
- Place the cookies on a parchment-lined baking sheet.
- Bake for 8–10 minutes or until edges are set.
- Allow the cookies to cool completely before decorating with royal icing.
Notes
Cookie dough can be made ahead and refrigerated or frozen. Store cookies in an airtight container for up to a week.
