- 4 boneless, skinless chicken thighs
- 1 cup creamed spinach
- 4 strips of turkey bacon, cooked and crumbled
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 onion, chopped
- Salt and pepper to taste
- Olive oil for cooking
- Pasta, rice, or mashed potatoes for serving
Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side until browned and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add the chopped onion and sliced mushrooms, sautéing until softened. Add minced garlic and cook for an additional minute.
- Stir in the creamed spinach and heavy cream, mixing until the mixture comes to a gentle simmer.
- Return the chicken to the skillet, spooning sauce over the thighs. Let it simmer for another 5 minutes to ensure the chicken is heated through.
- Serve hot with your choice of pasta, rice, or creamy mashed potatoes.
