Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a slow cooker, place the chicken thighs and season generously with salt, pepper, thyme, and rosemary.
  2. Add the chopped onion and minced garlic around the chicken.
  3. Pour in the rice, chicken broth, lemon zest, and lemon juice.
  4. Stir gently to combine all ingredients.
  5. Cover and cook on low for 360 minutes or high for 240 minutes.
  6. Fluff the rice with a fork and serve the chicken on top, garnished with fresh parsley.
