Description

Delightful roasted sweet potato rounds topped with creamy feta and drizzled with honey, perfect for cozy gatherings.


Ingredients

  • 2 large Sweet Potatoes
  • 2 tablespoons Olive Oil (Extra virgin recommended)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika (Omit if preferred)
  • 1 cup Feta Cheese (Goat cheese can be substituted)
  • 2 tablespoons Honey (Maple syrup can be used)
  • 2 tablespoons Parsley (Freshly chopped)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and scrub the sweet potatoes clean. Slice them into rounds about 1/2 inch thick.
  3. In a large bowl, combine sweet potato rounds with olive oil, salt, black pepper, and smoked paprika, ensuring each piece is well-coated.
  4. Spread the seasoned rounds on a baking sheet and roast for 20-25 minutes, flipping halfway through, until golden and tender.
  5. Remove from the oven and sprinkle crumbled feta over the top, then drizzle with honey.
  6. Finish with freshly chopped parsley and serve warm.

Notes

Slice and season sweet potatoes a day ahead for convenience. Store leftovers in airtight container for up to 3 days.
