- 2 large Sweet Potatoes
- 2 tablespoons Olive Oil (Extra virgin recommended)
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Smoked Paprika (Omit if preferred)
- 1 cup Feta Cheese (Goat cheese can be substituted)
- 2 tablespoons Honey (Maple syrup can be used)
- 2 tablespoons Parsley (Freshly chopped)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse and scrub the sweet potatoes clean. Slice them into rounds about 1/2 inch thick.
- In a large bowl, combine sweet potato rounds with olive oil, salt, black pepper, and smoked paprika, ensuring each piece is well-coated.
- Spread the seasoned rounds on a baking sheet and roast for 20-25 minutes, flipping halfway through, until golden and tender.
- Remove from the oven and sprinkle crumbled feta over the top, then drizzle with honey.
- Finish with freshly chopped parsley and serve warm.
Notes
Slice and season sweet potatoes a day ahead for convenience. Store leftovers in airtight container for up to 3 days.
