- 1 pound of Yukon gold or red potatoes
- 1 pound of green beans, trimmed
- 4 cloves of garlic, minced
- 3 tablespoons of olive oil
- 1 teaspoon of salt
- ½ teaspoon of black pepper
- 1 teaspoon of paprika (optional)
- 1 teaspoon of dried thyme or your favorite herb seasoning blend
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cut the potatoes into uniform pieces, about 1-inch cubes.
- Combine the potatoes and green beans in a large bowl.
- Drizzle with olive oil and sprinkle in the minced garlic, salt, pepper, and seasonings.
- Toss gently to coat every piece.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the oven for about 25-30 minutes, stirring halfway through.
- Serve hot as a delightful side dish.
Notes
For variation, add lemon juice, sprinkle with grated Parmesan, or mix in seasonal root vegetables.
