Ingredients
- Brussels sprouts

Instructions
- Preheat the oven to 425°F (220°C).
- Trim and half the Brussels sprouts, ensuring they are all roughly the same size for even cooking.
- Toss the Brussels sprouts with olive oil, chili powder, paprika, garlic powder, salt, and pepper, ensuring each sprout is evenly coated in spices.
- Spread the seasoned Brussels sprouts out on a baking sheet in a single layer. Roast them in the oven for 20-25 minutes until they turn golden brown and crispy.
- Remove them from the oven and squeeze fresh lime juice on top for that extra zing!
- Sprinkle with crumbled cotija cheese and add additional chili powder for an extra kick if desired.
- Garnish with fresh cilantro before serving, adding a pop of color and freshness.
