Description

A simple yet delightful Mediterranean Yellow Rice, perfect as a vibrant side dish packed with warm flavors.


Ingredients

  • 2 Tbsp. olive oil
  • ½ sweet onion (finely diced)
  • 3 cloves garlic (finely minced)
  • ¾ tsp. turmeric
  • ¼ tsp. cumin
  • ¼ tsp. paprika
  • 1 ¼ tsp. salt (to taste)
  • 2 ¼ cups water
  • 1 ½ cups basmati rice (rinsed)
  • 2 Tbsp. cilantro (finely chopped)
  • 2 Tbsp. parsley (flat-leaf, finely chopped)
  • ¼ cup pine nuts (toasted)

Instructions

  1. In a medium-sized pot over medium heat, add the olive oil and finely diced onion. Sauté for 2-3 minutes until the onion turns translucent.
  2. Stir in the minced garlic and sauté for another minute.
  3. Mix in the turmeric, cumin, paprika, and salt, and toast the spices in the skillet for about 1 minute.
  4. Pour in the water and add the rinsed basmati rice, giving it a good stir.
  5. Bring the mixture to a boil, then cover and reduce the heat to low. Let it simmer for 20 minutes.
  6. Remove from heat and gently mix in the chopped cilantro, parsley, and toasted pine nuts. Serve immediately.

Notes

You can prepare this rice a day in advance. Store leftovers in an airtight container in the fridge for up to 3 days.
