A simple yet delightful Mediterranean Yellow Rice, perfect as a vibrant side dish packed with warm flavors.
Ingredients

- 2 Tbsp. olive oil
- ½ sweet onion (finely diced)
- 3 cloves garlic (finely minced)
- ¾ tsp. turmeric
- ¼ tsp. cumin
- ¼ tsp. paprika
- 1 ¼ tsp. salt (to taste)
- 2 ¼ cups water
- 1 ½ cups basmati rice (rinsed)
- 2 Tbsp. cilantro (finely chopped)
- 2 Tbsp. parsley (flat-leaf, finely chopped)
- ¼ cup pine nuts (toasted)
Instructions
- In a medium-sized pot over medium heat, add the olive oil and finely diced onion. Sauté for 2-3 minutes until the onion turns translucent.
- Stir in the minced garlic and sauté for another minute.
- Mix in the turmeric, cumin, paprika, and salt, and toast the spices in the skillet for about 1 minute.
- Pour in the water and add the rinsed basmati rice, giving it a good stir.
- Bring the mixture to a boil, then cover and reduce the heat to low. Let it simmer for 20 minutes.
- Remove from heat and gently mix in the chopped cilantro, parsley, and toasted pine nuts. Serve immediately.
Notes
You can prepare this rice a day in advance. Store leftovers in an airtight container in the fridge for up to 3 days.
