Description

A thrilling mix of tender chicken, zesty lemon, fresh herbs, and vibrant veggies, perfect for cozy weeknight dinners.


Ingredients

Scale
  • 4 boneless chicken breasts
  • 2 tbsp olive oil
  • Juice & zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt & pepper, to taste
  • 1 can artichoke hearts, quartered
  • 1/2 cup green olives, sliced
  • 1/2 cup cherry tomatoes, halved
  • Fresh parsley, for garnish

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
  2. Add the boneless chicken breasts to the marinade and let them marinate for 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. In a large skillet, heat a drizzle of olive oil over medium-high heat, searing the marinated chicken for 4-5 minutes on each side.
  5. Add the artichoke hearts, sliced olives, and halved cherry tomatoes to the pan, gently tossing them with the chicken.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes until the chicken is cooked through.
  7. Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

Marinate chicken overnight for deeper flavor. Allow resting before slicing to keep juices in.
