Ingredients

- 4 boneless chicken breasts
- 2 tbsp olive oil
- Juice & zest of 1 lemon
- 3 garlic cloves, minced
- 1 tsp oregano
- 1 tsp thyme
- Salt & pepper, to taste
- 1 can artichoke hearts, quartered
- 1/2 cup green olives, sliced
- 1/2 cup cherry tomatoes, halved
- Fresh parsley, for garnish
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
- Add the boneless chicken breasts to the marinade and let them marinate for 30 minutes.
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat a drizzle of olive oil over medium-high heat, searing the marinated chicken for 4-5 minutes on each side.
- Add the artichoke hearts, sliced olives, and halved cherry tomatoes to the pan, gently tossing them with the chicken.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes until the chicken is cooked through.
- Remove from the oven, garnish with fresh parsley, and serve warm.
Notes
Marinate chicken overnight for deeper flavor. Allow resting before slicing to keep juices in.
