Description

A flavorful Mediterranean chicken dish that combines tender chicken with zesty lemon, garlic, and vibrant vegetables for a delightful escape.


Ingredients

  • 4 boneless chicken breasts
  • 2 tbsp olive oil
  • Juice & zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt & pepper to taste
  • 1 can artichoke hearts, quartered
  • 1/2 cup green olives, sliced
  • 1/2 cup cherry tomatoes, halved
  • Fresh parsley for garnish

Instructions

  1. Begin by marinating the chicken. In a bowl, combine the lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper. Add the chicken breasts and let them soak in this fragrant mixture for about 30 minutes.
  2. Preheat your oven to 375°F (190°C). As the chicken marinates, let’s get the cooking process started.
  3. Heat a large skillet over medium-high heat. Add a drizzle of olive oil, then sear the marinated chicken breasts for 4–5 minutes on each side until they achieve a beautiful golden-brown crust.
  4. Once seared, add the quartered artichoke hearts, sliced green olives, and halved cherry tomatoes directly into the skillet.
  5. Transfer the skillet to the preheated oven and bake for 25–30 minutes, or until the chicken is cooked through and registers 165°F (75°C).
  6. When finished, garnish the dish with fresh parsley and serve warm.

Notes

This dish can be marinated the night before to enhance flavor. Serve with rice, quinoa, or a fresh salad.
