- 2 tbsp red onion, thinly sliced
- 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
- 1 tsp lemon juice
- Salt and pepper to taste
- 1 tsp olive oil or favorite sandwich spread (optional)
Instructions
- Begin by lightly toasting your bread slices.
- Mash the avocado with lemon juice, salt, and pepper to create a creamy spread.
- Spread the mashed avocado evenly over one side of each bread slice.
- Layer cucumber slices on top of the avocado spread.
- Add a handful of fresh leafy greens.
- Sprinkle on sliced red onions and cherry tomatoes for extra flavor.
- Scatter your chopped fresh herbs on top.
- Drizzle olive oil or your favorite spread if desired.
- Close the sandwich with the other slice of bread.
- Cut your sandwich in half and serve immediately.
Notes
For the best cucumber slices, use a mandoline to achieve ultra-thin slices. Prepare the avocado and cut vegetables in advance, storing them separately in airtight containers.
