Description

A fresh and flavorful sandwich packed with creamy avocado, crisp cucumbers, and fresh greens, perfect for a cozy meal.


Ingredients

  • 2 slices of bread of choice
  • 1 ripe avocado
  • 1 medium cucumber, thinly sliced
  • 1/2 cup fresh leafy greens (lettuce, spinach, or arugula)
  • 1/4 cup cherry tomatoes, halved (optional)
  • 2 tbsp red onion, thinly sliced
  • 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 1 tsp olive oil or favorite sandwich spread (optional)

Instructions

  1. Begin by lightly toasting your bread slices.
  2. Mash the avocado with lemon juice, salt, and pepper to create a creamy spread.
  3. Spread the mashed avocado evenly over one side of each bread slice.
  4. Layer cucumber slices on top of the avocado spread.
  5. Add a handful of fresh leafy greens.
  6. Sprinkle on sliced red onions and cherry tomatoes for extra flavor.
  7. Scatter your chopped fresh herbs on top.
  8. Drizzle olive oil or your favorite spread if desired.
  9. Close the sandwich with the other slice of bread.
  10. Cut your sandwich in half and serve immediately.

Notes

For the best cucumber slices, use a mandoline to achieve ultra-thin slices. Prepare the avocado and cut vegetables in advance, storing them separately in airtight containers.
