A delightful no-bake dessert combining layers of creamy lemon filling and sweet blueberries, perfect for warm summer evenings.


Ingredients

  • 9 lasagna noodles
  • 2 cups blueberries
  • 1 cup lemon curd
  • 1 cup cream cheese
  • 1 cup whipped cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Mint leaves for garnish

Instructions

  1. Cook the lasagna noodles according to package instructions and let them cool.
  2. Combine cream cheese, powdered sugar, vanilla extract, and lemon zest until smooth.
  3. Fold whipped cream into the cream cheese mixture.
  4. Spread a layer of lemon curd in the bottom of a dish.
  5. Layer with noodles, followed by the cream cheese mixture, and then a layer of blueberries.
  6. Repeat the layers until all ingredients are used, finishing with the cream cheese mixture on top.
  7. Refrigerate for at least 240 minutes or overnight.
  8. Garnish with fresh mint leaves and extra blueberries before serving.
