Description

A warm, comforting dish featuring tender beef simmered in rich broth, served over noodles with garlic and ginger.


Ingredients

  • 1 pound beef (chuck or stew meat)
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic (minced)
  • 1-inch piece ginger (grated)
  • 1 carrot (sliced)
  • 1 bell pepper (sliced)
  • 4 green onions (chopped)
  • 8 ounces noodles (egg or rice noodles)
  • Salt and pepper to taste
  • Optional toppings: sesame seeds, additional green onions

Instructions

  1. Combine the beef, beef broth, soy sauce, sesame oil, garlic, and ginger in a large pot or slow cooker. Stir gently to mix the flavors together.
  2. Let it cook on low for 360-480 minutes until the beef is tender and infused with delicious flavors.
  3. Add the sliced carrots and bell peppers in the last hour of cooking for a lovely crunch.
  4. Cook the noodles separately according to package instructions.
  5. Serve the beef mixture over the noodles, garnished with chopped green onions and sesame seeds if desired.
