Ingredients

  • 30 grams Almond Flour
  • ⅓ teaspoon Xanthan Gum
  • 2 tablespoons Butter
  • 1 tablespoon Low Carb Sugar Substitute (granulated)
  • ¼ teaspoon Salt
  • 1 Egg
  • ½ teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder
  • ⅓ cup Low Carb Sugar Substitute (powdered)
  • ½ teaspoon Heavy Cream
  • ⅓ teaspoon Vanilla Extract
  • 1 tablespoon Water (if needed)

Instructions

  1. Preheat the oven to 390°F (200°C) and line a baking pan with baking paper.
  2. Combine the almond flour, xanthan gum, salt, granulated sugar substitute, and baking powder in a mixing bowl.
  3. Melt the butter over low heat and add the vanilla extract, stirring gently.
  4. Fold the melted butter mixture into the flour mixture, stirring for 2-3 minutes until a soft dough forms.
  5. Allow the dough to cool to room temperature, then mix in the egg until it becomes elastic.
  6. Cover the dough and let it rest for 15-20 minutes to enhance its texture.
  7. Shape the dough into small balls, roughly the size of a tablespoon, and place them on the prepared baking pan.
  8. Bake for 10 minutes at 390°F, then lower the temperature to 355°F and bake for an additional 5-10 minutes until they turn a lovely golden color.
  9. Whisk together the powdered low-carb sugar substitute, heavy cream, vanilla extract, and water for the glaze until thick but pourable.
  10. Roll the warm donut balls in the glaze and serve immediately for a delightful treat!
