- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 avocado, diced
- 1 cup cooked rice (white or brown)
- Salt and pepper to taste
- Fresh cilantro (optional for garnish)
Instructions
- In a small bowl, mix together honey and lime juice to create a marinade.
- Season the chicken breasts with salt and pepper and marinate in the honey-lime mixture for at least 30 minutes.
- Grill or pan-cook the chicken over medium heat for 6-7 minutes per side until fully cooked.
- While the chicken is cooking, prepare the rice and stir in the diced avocado.
- Once the chicken is done, slice it and layer it over the avocado rice.
- Garnish with fresh cilantro if desired and serve warm.
Notes
