Description

A tropical-inspired grilled chicken recipe infused with pineapple and a savory marinade, perfect for summer gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/4 teaspoon black pepper
  • 1 pineapple, cut into rings
  • Fresh cilantro for garnish

Instructions

  1. Whisk together the pineapple juice, soy sauce, brown sugar, garlic, ginger, and black pepper until well combined.
  2. Add the chicken breasts to the marinade, making sure each piece is well-coated. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and grill for 6-8 minutes on each side, or until fully cooked.
  5. Add the pineapple rings to the grill during the last few minutes, cooking until caramelized.
  6. Serve the grilled chicken topped with warm pineapple rings and fresh cilantro.

Notes

Marinating the chicken overnight enhances the flavor. Leftovers can be stored for up to 3 days.
