- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/4 teaspoon black pepper
- 1 pineapple, cut into rings
- Fresh cilantro for garnish
Instructions
- Whisk together the pineapple juice, soy sauce, brown sugar, garlic, ginger, and black pepper until well combined.
- Add the chicken breasts to the marinade, making sure each piece is well-coated. Cover and refrigerate for at least 1 hour or overnight.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and grill for 6-8 minutes on each side, or until fully cooked.
- Add the pineapple rings to the grill during the last few minutes, cooking until caramelized.
- Serve the grilled chicken topped with warm pineapple rings and fresh cilantro.
Notes
