Description

A delicious, vibrant sandwich packed with fresh veggies and a creamy herb sauce, perfect for lunch or a picnic.


Ingredients

  • 2 slices of whole-wheat bread
  • 2 tablespoons creamy herb sauce (made with avocado, herbs, and yogurt)
  • 1/4 cucumber, thinly sliced
  • A handful of fresh lettuce
  • 1 medium tomato, sliced
  • 2 oz. mozzarella cheese, thinly sliced
  • 1/2 ripe avocado, sliced

Instructions

  1. Spread the creamy herb sauce generously on one slice of whole-wheat bread.
  2. Layer with sliced cucumbers, fresh lettuce, juicy tomatoes, luscious mozzarella, and creamy avocado.
  3. Top with the second slice of whole-wheat bread and press down gently.
  4. Cut the sandwich in half and serve immediately or pack for a picnic!
