Description

Tender and juicy Greek Chicken Kabobs bursting with zesty flavors, perfect for summer gatherings or quick weeknight dinners.


Ingredients

  • 1 lb chicken breast, cut into cubes
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 bell pepper, cut into squares
  • 1 onion, cut into squares
  • Skewers (wooden or metal)

Instructions

  1. Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl for a fragrant marinade.
  2. Add the chicken cubes to the marinade, ensuring they’re fully coated and marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Thread the chicken, bell pepper, and onion onto skewers, alternating colors.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally.
  6. Serve on a platter, adorned with fresh lemon slices and enjoy!

Notes

For a spicy kick, add crushed red pepper flakes to the marinade or for a Mediterranean style, toss in cherry tomatoes and zucchini pieces.
