A quick and easy weeknight dinner that combines tender steak and fresh zucchini in a rich garlic butter sauce.

- 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Pat the steak bites dry with paper towels. Season them with salt and pepper, ensuring every piece is well-coated.
- Heat olive oil in a large skillet over medium-high heat.
- Add steak bites to the hot skillet in a single layer. Sear for 1-2 minutes per side until browned. Remove steak from skillet and set aside.
- In the same skillet, add butter and melt. Add minced garlic and cook for about 30 seconds until fragrant.
- Toss in the zucchini and cook for 3-5 minutes, stirring occasionally, until tender-crisp.
- Return the steak bites to the skillet and toss to coat with garlic butter, cooking for another 1-2 minutes until heated through.
- Garnish with fresh parsley if desired and serve immediately.
Notes
Can customize with red pepper flakes, blue cheese, or different vegetables. For best results, use a hot skillet for caramelization.
